  • 1/4 cup granola

Instructions:

  1. In a bowl, mix the Greek yogurt with honey or agave syrup.
  2. In a tall glass or parfait dish, layer half of the yogurt mixture.
  3. Add a layer of mixed berries.
  4. Add another layer of the yogurt mixture.
  5. Top with granola and remaining berries.
  6. Garnish with fresh mint leaves if desired.
  7. Serve immediately or refrigerate for up to 2 hours.

Frozen Banana Bites

  • 2 ripe bananas
  • 1/2 cup dark chocolate chips
  • 1 tablespoon coconut oil
  • 1/4 cup crushed nuts or coconut flakes (optional)

Instructions:

  1. Slice the bananas into 1/2-inch thick rounds.
  2. Line a baking sheet with parchment paper and place the banana slices on it.
  3. Freeze the banana slices for at least 1 hour.
  4. In a microwave-safe bowl, melt the dark chocolate chips with coconut oil in 30-second intervals, stirring in between, until smooth.
  5. Dip the frozen banana slices into the melted chocolate, then place them back on the parchment paper.

Ingredients:

  • 1 cup light coconut milk
  • 1/2 cup mango puree (about 1 ripe mango, blended)
  • 3 tablespoons chia seeds
  • 1 tablespoon honey or maple syrup
  • Fresh mango slices for topping (optional)

Instructions:

  1. In a medium bowl, whisk together the coconut milk, mango puree, chia seeds, and honey or maple syrup.
  2. Let the mixture sit for 10 minutes, then whisk again to prevent clumping.
  3. Cover and refrigerate for at least 4 hours or overnight until the chia seeds have expanded and the mixture has thickened to a pudding-like consistency.
