This is one of my favorite recipes. I especially enjoy serving it for company. The recipe originated from a Food Network show titled, Best Thing I Ever Made. Unfortunately, I do not recall the name of the chef. He said this was the favorite menu item from his restaurant and that he had never given the recipe to anyone. When he said, “I am giving this to you now,” I quickly grabbed my pen. “Your challenge is to choose the correct measurement.” I’ve been making this for awhile now and it is a “best thing I ever ate” type of dish.
The ingredients are:
Shrimp
Coconut oil
Shallots
Garlic
Bananas
Sriracha
Soy sauce
Honey
Lime juice
Cilantro
After some experimentation, I settled on the measurements that follow:
21-15 shrimp peeled and deveined – Cut shrimp into bit size pieces
For 4 people, I use one pound of shrimp
Sauté shrimp in coconut oil. I use 1 TBSP and add more oil as needed.
Add 1 TBSP of finely chopped shallots and 1 TBSP finely chopped garlic. Stir Fry. Cook until shrimp is partially cooked.
Remove Shrimp from pan.
Add to the pan 3 ripe bananas. Mash. Add 1 TSP Sriracha sauce, 1 TSP soy sauce, 1 TBSP honey.
Saute until well incorporated.
Add shrimp back into pan, sauté mixture, cooking until the shrimp is a lovely pink.
Add 1 TBSP lime juice and TBSP cilantro.
Serve over Basmati Rice. The rice is tastier if you use chicken broth rather than water, especially homemade broth.
When I serve this for company, I always ask them to guess, what is in the dish. Only about half the time do they answer, “bananas.”
The trick of this recipe is to use the measurements that hit your taste buds. As you are cooking, adjust to fit your palate.
