There is almost nothing more enjoyable than rich, chocolate cream cheese brownies. Give this recipe a try and see if you can resist eating more than one. They make a perfect, easy dessert that’s a real crowd-pleaser.
Brownies
- 3 ounces unsweetened chocolate, coarsely chopped (3 squares)
- 4 ounces bittersweet chocolate chips, coarsely chopped
- 1/2 pound (2 sticks) unsalted butter, cut into pieces
- 6 eggs
- 1 cup (packed) light brown sugar
- 1 cup sugar
- 2 teaspoon pure vanilla extract
- 1 1/2 cups unbleached all-purpose flour
Cream Cheese Brownies Topping
- 8 ounces cream cheese (1 cup), softened
- 4 cups confectioners’ sugar (1 pound)
- 2 eggs
- 1/2 cup bittersweet or semisweet chocolate chunks or chips (3 ounces)
- 2 tablespoons confectioners’ sugar for garnish (optional)
Directions:
Preheat the oven to 350º. Butter a 13 x 9 x 2-inch glass baking dish and set it aside.
For the Brownies
- Place the unsweetened and bittersweet chocolate and the butter in a microwave-safe bowl or in the top pan of a double boiler over simmering water.
- If placed in the microwave, heat at 1-minute intervals, checking and stirring before heating again.
- Alternatively, melt over the simmering water, constantly stirring until smooth and glossy.
- Add the six eggs, one at a time, beating with a wooden spoon after each addition.
- Mix the brown and white sugars into the mixture.
- Stir in the vanilla.
- Add the flour and blend until no white shows.
- Pour the mixture into the baking dish and smooth the top with a rubber spatula.
For the Cream Cheese Topping
- Place the cream cheese and powdered sugar in a small mixing bowl. Beat until just combined at low speed using an electric mixer or wooden spoon.
- Add the eggs and continue to beat for several minutes at medium speed. Scrape the sides of the bowl as necessary.
- Pour over the chocolate mixture in the pan.
- Sprinkle the chocolate chunks over the top.
- Place the pan in the oven and bake for 35 to 45 minutes, or until the top is set and golden brown.
- Remove and place on a rack to cool.
- Dust the top with confectioners’ sugar using a sieve, if desired.
To serve the chocolate cream cheese brownies, cut them into squares about 2 x 2 inches and place them on a platter.
Makes about 24 (2-inch) brownies.
